The beautiful four-star Parador de Cuenca was formerly the convent of San Pablo, built during the sixteenth century. It occupies a privileged position in the Hoz del Huécar gorge on the outskirts of Cuenca in La Mancha, next to the 'Casas Colgadas' (Suspended Houses). The glazed cloister and former chapel are now an inviting café which complements an interior combining traditional elements with contemporary details.
This fantastic Parador offers a wide selection of guestrooms, including 54 twins, 7 doubles and two suites. They are all welcoming and have been tastefully decorated with pastel colours and every detail you may need during your stay. They come complete with private bathroom, hairdryer, direct dial telephone, safety deposit box and mini bar. Some of them have spectacular views over the gorge from its windows.
Well-seasoned dishes form the basis for the traditional cooking of Cuenca which is served in the restaurant of the Parador. You can enjoy dishes including 'morteruelo' (rich game-animal paté made with olive oil and spices ), 'pisto con lomo de orza' (tomato-based ratatouille with marinated loin), roasts and 'alajú' (dessert made from almonds, walnuts and honey).
